Thanksgiving All-Stars: Cranberry Orange Relish

Weslie Bellini of shared this recipe for a scrumptious cranberry orange relish to top Thanksgiving turkey this year.

Bellini said the relish was great not only on hot turkey, but also on turkey sandwiches the day after the holiday.

"This is a refreshing crunchy addition to your dinner and a dish you can make a couple of days ahead of time," Bellini said.

One bag of fresh cranberries.

One large naval orange

One cup of pecans finely chopped.

1/4 cup of brown sugar.

Directions:

1. Toast the pecans in oven for about four minutes at 400 degrees. Let the nuts cool and then chop them very fine.

2. Wash and check fresh cranberries. Discard any that are bruised and not ripe. Zest the entire orange, making sure you don't go down to the white skin.

3. In a food processor, process the cranberries until they are finely chopped.  Do not over chop or they will become pasty. Pour cranberries into mixing bowl, and add the other ingredients. Stir until everything is well mixed, and add juice from the orange and some more sugar to taste. Refrigerate until you’re ready to serve.
